Frittata de verdure al forno

The occupation and the activity

Today I made frittata de verdure al forno, also known as baked vegetable omelette. This occupation is classified under italian cooking. Relevant taxonomies would be challenge, and leisure. The reason why people cook is for necessity, I classify cooking as a necessity, if i didnt cook I wouldnt have anything to eat for dinner. Food has a meaning to different cultures, it is meaningful to make dinner for your family in some cultures. And hundreds of years ago, cooking was done as a necessity.

The occupation and identity

Cooking has so many roles, routines and norms. It was the norm for woman to cook dinner for their husbands, however over time this is changed and now either person can cook dinner while the other person is the breadwinner. Cooking has formal recognition is the form of tv shows like Master Chef, and Jamie Olivers food shows. I identify the occupation has a leisure activity and also as a challenge, as I have not really cooked much before.Cooking is very expressive and alot of expression can be shown through cooking.

Technical Aspects

Materials Used :

2 tablespoons extra virgin olive oil
50grm butter
150grm frozen peas
6 eggs
150grm cheese, finely chopped
salt and pepper

Equipment used :

Spoon/whisk/fork
Bowl
Microwave
Oven
chopping board
knife
ovenproof dish
baking paper

How to make :

Preheat oven to 180 degree
Microwave peas until peas have softened (2-3mins)
Remove from microwave and allow to cool slightly
In a bowl, beat eggs, with some salt and pepper, stir in the cheese
and the cooled vegetables
Lightly grease an ovenproof dish, with some butter, pour in the mixture and bake in the preheated oven for 20-25minutes until the omelette has set and is golden
Remove from oven, leave to rest for a minute and serve hot or cold

Environment

I learnt this occupation in my own home as it was easiest and quickest. However you can learn this occupation anywhere as long as you have the resources and the equipment. In regards to physical environment you just need the equipment and resources. Cooking is a very educational occupation where you learn from doing and seeing. Cooking used to be done for necessity hundreds of years ago however now it has become more of a social occupation as well, people do it with friends and family and have competitions. Cooking is not just a individual occupation, it is also a group occupation and I would prefer to cook with someone else as it gives that little bit more motivation.

Learning the occupation

Instructions are posted above. The risks when doing this recipe are just to be careful when chopping the cheese with sharp knife, otherwise not really many other risks. The tips are to use the microwave to cook the vegetables, as it is faster and more effective. Making sure you measure out your ingrediants precisely is a biggie. This recipe is great if you have left overs in the fridge that you need to get rid of and is easy to make

Participation barriers and affordances

I was assisted in participating in this activity by my boyfriend and the fact that I was hungry and I had promised to make dinner. Having seen a picture of what I was making from the cookbook I really wanted to try and see if I could make mine look like that ! The barriers I encountered were not having all the ingrediants, I didnt have spinach so we went without and it still worked out well. Also not knowing what different cheeses were, it asked for different cheeses but I just used edam cheese instead.

Personal reflection

From this recipe I learnt to go with the flow and not to fuss over the fact that I didnt have all the ingrediants that were stated in the cookbook. I am super satisfied with what I learnt, I had so much fun making it and it wasnt time consuming. I want to keep involved in this activity as I really enjoy it !

Lasagna Vegetariana

The Occupation and Activity

The recipe I made for dinner tonight was Lasagna Vegerteriana, as the name suggests a vegetable lasagne. This occupation is classifed as cooking  and its italian cooking as the type of cooking completed. In terms of taxonomies, it could be classified as a multitude of different headings such as challenge, leisure, etc. As this occupation is engrained in human history it would be classified as necessity, it also has meaning to some people. Cooking has been done for hundreds and thousands of years and different cultures have different meanings for cooking.

The occupation and Identity

With cooking there are so many roles, norms and routine, it all comes down to the person and the reason why they are taking part in this occupation, every person sees cooking differently. I see cooking as leisure and productivity, however it can also be seen for meaning and necessity. Like I have said in other posts, cooking used to be done by woman while the men were the breadwinners, however this has totally changed in more recent times.

Technical Aspects

Materials used :

90ml oil
1 quanity of whilte sauce
1 tablespoon onion, finely chopped
500ml tomato passata
8 dried lasagne sheets
180grm cheese
20grm parmesan cheese, freshly grated
salt and pepper
vegetables

Equipment used :

Oven
Stove top
Spoon/fork/spatula
Oven dish
Sauce pans
tin foil

All resources were either found in the home environment or at supermarket.

Making Lasagne - How to :

1)Pre heat oven to 200 degrees
2)Heat oil in pan, and saute vegetables over a medium heat until soft, meanwhile make white sauce
3) Take the veges out of pan and place on ktichen paper to remove excess oil and set aside
4) Pour most of oil out of pan and put back on medium heat, sweat the onion and add the tomato passata and cook for 5mins.
5) Remove from heat, add to cooked veges, season with salt and pepper and set aside
6) Lightly grease an ovenproof dish with some oil. Line the dish with a little of the tomato sauce (not including any vegetables). Arrange a layer of lasange sheets over the top, then a layer of white sauce. Next put a layer of tomato and vege sauce, including the vegetables, sprinkle with cheese. Continue with another layer of lasange sheets and then all the following layers until all the ingrediants have been used. Make sure to end with a topping of cheese.
7) Cover with aluminum foil and bake in the oven for 15mins, Remove foil and bake for another 15mins.
8) Remove from oven, leave to rest for another minute or so and serve.

The Environment

I learnt my occupation in my own home, in the kitchen. As said in other posts cooking is such a easy thing to do that you can do it almost everywhere if you have the facilities and ingrediants. There is nothing really to limit you from doing it. Cooking is more fun and motivating when you have a reason to do it, I find I like cooking with other people, as it gets a bit lonely when you are doing it yourself. Having someone challenge you really helps

Learning the Occupation

Steps are outlined above. Some tips that i found were, not to add to much cheese or it gets sickly and you have to snap the lasange sheets to fit into the ovendish. Also making sure you measure everything is helpful as you then get it right and it tastes better.

Participation Barriers and Affordances

Having a reason to cook really assisted my motivation. I really enjoy having a challenge and having some new to try and every new recipe is motivating. The barriers I encountered again were having to go to supermarket to get the ingrediants, as some of the ingrediants we dont have in our cuboard. Also not ever having heard of tomato passata was interesting !

Personal reflection

Very good recipe, so much fun, although time consuming. Need to make sure you have all ingrediants before you try this recipe as it requires quite a few !! however you can skip out a few ingrediants !

Fritelle di Patate

The Occupation and the Activity

Today I made Fritelle di patate also known as Potato cakes with leeks and bacon (however for my recipe I didnt have leeks or bacon). This is an italian cooking recipe which i would classify as a challenge or leisure activity. Recipes like this are done for necessity as it means I have something to eat for dinner, however it is also done for meaning, as it is engrained in italian history. Every person has a different purpose for cooking. I am doing it as a challenge and for leisure however also for necessity as I need to learn to cook so that when I have kids or have family over that I can cook a meal for them.

The occupation and Identity

Cooking has been a womans role for along time. Hundreds of years ago, woman would stay home and cook while the men were working and being the breadwinner. However now roles have changed and it all depends on the people. It is the norm to cook for dinner and to try and make it different and fun. Cooking is done whenever people want and where ever people want. Depends if people are in the mood or if they have have facilities. I identify this occupation as leisure but also for self care, as everyday you need to eat and by cooking you are satisfying that need. There is recognition of cooking, you just have to look on TV at such shows as Master Chef that glorify cooking. There are also cooking competitions , you just have to look hard to find these. Cooking is a great way to express yourself as you can be as creative as you like, there are no limits really !

Technical Aspects

Materials used :
600grm potatos, peeled and roughly chopped
4 tablespoons extra virgin olive oil
2 egg yolks
10gram cheese
60g plain flour
Salt (optional)


Equipment required
Stovetop
Potato Masher
Fry pan
Saucepan
Cup
Fork
Benchtop

All equipment and materials were sourced from the house or from the supermarket.

How to make Fritelle di patate

Boil potatoes in plenty of slightly salted water until tender, drain and mash
Put 1 tablespoon of olive oil in a pan, add the leek and bacon, and saute over a medium heat
, stirring from time to time to ensure it doesnt burn
Add the egg yolks, cheese, flour and pinch of salt, to the mash. Then add the leek and bacon and mix well. With your hands, take a little of the mixture and form flat rounds
Heat the remaining olive oil in a large frying pan. Cook the potato cakes over a medium heat on both
sides until golden
Remove, drain on kitchen paper and serve.

The Environment

I learnt this occupation in my own home environment, however nothing stops you from learning it anywhere else. As long as you have the equipment and facilities nothing is stopping you from making it ! This can be anywhere from your own home, to someone elses home or on a BBQ even ! Cooking is quite a social activity and is also educational. It is more fun to cook with a friend or in a group, and you are also learning while you are cooking so very educational. Physical environment you need a specific amount of items and equipment and space to make this recipe.

Learning the occupation

Instructions are posted above.  Safety considerations that I found out today was to be careful when using the cheese grater. I managed to grate my finger and do quite a good job. All I can say is be careful and keep your fingers away from the cheese grater. It is not nice to grate your finger at all.  Also another tip is making sure you get the exact amount of the ingrediants. Again I had to guess today as we dont have scales. The potato cakes didnt turn out as firm as I would have liked, would have been beter if i measured out the ingrediants properly.

Participation Barriers and Affordances

Having my boyfriends support and encouragement really helped my participation. I find it alot easier and am more motivated if I have a reason to cook, todays reason was to make dinner, as I had been getting a bit slack ! The only barrier I encountered was that we didnt have leeks or bacon in our cupboards, however this didnt stop me, it still worked and still turned out well, however would have been nicer if it had all the ingrediants though ! Next time I will make sure I have leek and bacon so we can see how it really tastes. Also barrier was grating my finger, it meant I had a lack of movement and had to be more careful afterwards. Made it also difficult to flip the potato cakes.

Personal reflection

This recipe is so much fun and so easy to do, It is great if you have little motivation or time (like me!), I am super glad I found motivation to do this , however next time would be great if I didnt grate my finger ! I will be trying this recipe again but this time with leek and bacon, and Im sure cooking will be something I will continue on with, as it really is a necessity !

Gnocchi al forno

The occupation and the activity

Tonight for dinner I made Gnocchi al forno or in english Baked gnocchi with a cheese, ham and sage sauce. However I did not use ham or sage in todays recipe. This is an italian recipe and is classified under cooking still. The purpose of this activity is to learn how to cook a new recipe, I classify this as for necessity as cooking is something that is important to learn so you can cook healthy meals.

The occupation and identity

Cooking is done as either a leisure activity, or for necessity. People cook at all sorts of times and rountine all depends on the person. I made this meal for dinner and I had planned out what time i was going to start and what time dinner would be ready. I would call this a leisure activity as I find it fun and low key and i can muck around and learn at my own pace. It is something I do in my own time and i dictate when and where i do it. There is most likely formal recognition of this activity, you get praise and encouragement from friends and family which i would increase my level of achievement. There are also clubs and groups which encourage italian cooking.

Technical Aspects

Materials used :

Basic white sauce (which i made)
150gram cheese roughly chopped
200grm ham (but i didnt use ham)
30gram butter
6 sage leaves (I didnt use as I didnt have any)
600grm ready made potato gnocchi (I only used 400grm)
100grm parmesan cheese, grated
salt and pepper
Foil

Equipment required :

kitchen
Oven
Spoon/knife
Cheese grater
Large saucepan
small saucepan
microwave
ovenproof dish
slotted spoon

All the resources were accessed from either the kitchen at home or from the local supermarket.

Techniques :

preheat oven to 200degree
Prepare white sauce, when it is ready, remove from heat and stir in ham and cheese. Set aside
Bring a large saucepan of slightly salted water to boil
Meanwhile heat butter in small pan and add sage leaves and saute for a minute
Drop gnocchi into boiling water, when they float to surface take them out with slotted spoon, add to pan of butter and sage, stirr well
Grease overproof dish with butter, spread some cheese and ham sauce on the base and add rest to boiled gnocchi, mix well. Pour half the gnocchi into the dish, sprinkle with parmesan, then pour in remaning gnocchi and top with parmesan.
Cover with sheet of foil, bake in pre heated oven for 10mins. Remove foil and continue to bake for futher 15minutes until golden
Take out of oven, leaave to rest for couple of minutes and then serve.

The environment

I learnt my occupation at my own house in the kitchen. However cooking can be learnt in different environments and it all depends on the person and what facilities they have. Over time you become more confident in cooking , so i could classify cooking as educational, you learn from you own mistakes as well as learning by watching other people and talking to other people about their experiences. In regards to physical environment, you need power and a place to put all your ingrediants on, you need to be able to access certain equipment such as microwave and oven and need a stove to heat water. Cooking is very social so you are able to do it both individually and with groups of people. It is fun to do it with other people and if you are competitive then this is great. I like to do it myself as i can work at my own pace and not feel pressured for it to turn out amazingly.

Learning the occupation

Instructions are above, they came out of a cooking book i borrowed from the library. Risks with cooking are quite a few, however you just have to be aware of using knifes and stoves and other equipment.  A few tips that I found out was not to use much cheese as the recipe goes a bit soggy and to measure your ingrediants otherwise it doesn't always work out and the recipe can be clumpy !

Participation barriers and affordances

Having time assisted my participation in this activity. And also having the money to buy the ingrediants helped. The barriers I encountered were that I did not always have the correct about of ingrediants and not having a measuring cup or somewhere that i could measure out ingrediants prefectly thus making it harder to get the recipe 100%.

Personal reflections

This recipe is alot of fun and I enjoyed making it. I learnt to have patience and that sometimes you have to go with the flow and you dont always have the ingrediants.  I have alot more to learn and would love to become more expert in this recipe !

Gratinato di patate e formaggio (Cheesy Potato Bake)

The occupation and the activity

Today I made Gratinato di patate e formaggio or known as cheesy potato bake. It links to italian cooking as it is a easy recipe that the whole family will love. Making cheesy potato bake would be classified as necessity as it would come under cooking and learning. I am using this recipe to learn to cook italian food however to italian people it may have a different meaning.

The occupation and identity

The routines that are linked to italian cooking are that it would be done for a reason, to make food, normally for lunch or dinner. Food is normally made by the woman as they are cooks while the men are the breadwinners. However any person in the family can make food. I would classify this occupation as leisure and also neccessity as it is something I do in my spare time but also it is necessary for me to learn to cook so i can make myself food to eat.

Technical aspects

Materials used :

1kg Potatos
some butter to grease dish
200gram Cheese
2 eggs, eaten
salt and pepper
a little grated nutmeg
100ml fresh cream
100ml milk
sprinkle of thyme

Equipment needed :

Oven
Spoon/potato peeler
cheese grater
measuring cup
Bowl
Baking dish
Chopping board
Sharp knife

All resources were accessed from supermarket or from home.

How to make potato bake

1) Preheat oven to 200degrees
2) Peel potatos and slice into rounds approx 3mm thick
3) Grease ovenproof dish with butter and line it with layer of potato slices slightly overlapping
each other. Sprinkle some grated cheese, thyme and season with salt, pepper. Top with another layer of potato and continue until all your ingrediants have finished keeping aside a handful of cheese.
4) In a bowl, combine with milk, cream, beaten eggs, a little salt/pepper and the nutmeg. Pour this mixture over the layered potatos, sprinkle with the remaining cheese and bake in the oven for 40miutes until golden.



























The environment

I learned the occupation in my home in the kitchen. Others are able to learn this occupation in cooking classes, other peoples homes and kitchens. Any activity is more fun to do with another person, I find its more motivating to have other people to cook with. Cooking is very educational and social and you can learn more if you help or watch someone else.














Learning occupation

Instructions are above. The only risk with cooking, you just have to be careful when cutting the potatos with the knife, as you wouldn't want to cut yourself. You just need to be aware of what you are doing, and taking precautions to protect yourself from injury.
Some tips are - not to add to much cheese, as it will taste very rich, make sure you dont add to much salt or pepper as it will taste bad ! and to plan your time, as it takes along time to cook once in oven.

Participation barriers and affordances

I found that having time and being hungry really assisted my participation in making this dish. Plus finding a new recipe which sounds delicious really makes you want to make it and see how it turns out. I had a picture to do by but I wondered if my dish would look as good as the picture too ! The barriers I encountered was needing to get all the ingrediants, as most of the ingrediants I did not have in the house hold. Having money to be able to buy the ingrediants helped otherwise it would not have been possible to make this dish.

Personal reflections

Today I learnt how to make cheesy potato bake and to be prepared, make sure you have all the ingrediants and make sure you plan what time to start so you know what time it will be cooked and ready by. I am definely satisfied with my learning as I am becoming more confident with my cooking and am starting to really enjoy it ! There is so much still to learn, and I would love to try adding some meat or other ingrediants and see how that turns out. I will definely continue my cooking and want to expand my knowledge !

Making Italian Pizza

The occupation and activity

I decided to try making pizza last week. Pizza is engrained in italian history and is simple yet fun to make. I made both vegeterian pizza and meat pizzas. I brought bases so i just had to add toppings and put in oven !

Pizza can be made in any shape and with any sort of vegetables, it can have meat in it or can be vegeterian for people who prefer not to have meat. Pizza is world known, and is sold in most countries. People make pizza for necessity, as pizza is made to eat. However as times changed pizza has now become a leisure activity that families make with their kids.

Occupation and Identity

When making pizza routines depend on the person making the pizza. Pizza can be made for lunch or dinner or at any occasion that suits the person making it. Anyone can make pizza, any age, any person ! I would say i identify this occupation as cooking and learning cooking skills. There are italian cooking groups which teach you to cook pizza and other italian recipes in Hamilton however are not easy to find.

Technical Aspects

Ingrediants needed :

Pizza base
Tomatos
Chicken/bacon/meat
Tomato sauce
Mushrooms
Cheese
Oregano

Put pizza base on oven tray/pizza tray, add tomato sauce, then add cheese then any
toppings (in this case see above for toppings I used). Then put in oven and bake for 10-15minutes
until ready to eat.

All the resources were either accessed from the local supermarket or from home.

The Environment

I learnt to make pizza in my own home environment however pizza can be made anywhere you desire. Pizza is now made not only in peoples homes but also in shops/restaurants, friends places, kitchens, BBQ's. Pizza would be more fun to be made in a group then alone, however you can do either.

Learning the occupation

Instructions are minimal, just add toppings you like to pizza base. You must add the cheese after thetomato sauce and then add toppings otherwise the toppings tend to slide off when they are being cooked. Also I learnt that putting to much cheese on is not a very good idea as it gets to rich to eat !
Pizza can be made with any left overs in the fridge or what ever you want to put on it, its quite easy to make the pizza how you want it with what you like on it !

Participation barriers and affordances

Having someone else to cook for really helps increase participation. There were no real barriers with making pizza, as it is cheap to buy the ingrediants and easy to make. It does not require alot of time either.

Personal reflections

I found making pizza went smoothly and to plan.  I learnt how to make pizza and what items I could put on it that make it taste good. I am super satisfied with learning this as it will be a recipe I will use when I want to make something quick and fast. The more I make pizza the more I will figure out what I like on the pizza. I will continue to make pizza for myself and other people as it is fun and simple dinner idea.

First attempt at making Pasta !

Occupation and Activity and Technical Aspects
Today I started on my occupation, I went to Emily's a friend of mine and she taught me to make pasta dough by hand, and then use the pasta machine to stretch and cut the pasta.

To make pasta dough you need

-Water
- Flour
- 1 Egg

Add egg to flour and mix until it turns into dough, then add water as needed. Very simple to do. When the dough mixture is kneaded enough it is ready to put through the pasta machine to stretch it and then after the pasta is stretched you can cut the pasta. The process takes time but once its done it looks great

Next once the pasta is cut, you can cook with it !!!

The purpose of making pasta by hand is to understand that before the pasta machine was invented we had to do all our cooking by hand, it also gives me an appreciation of the food and the time and effort I put into it to turn it into the finished product.

Hand making pasta is both purposeful and necessery. Purposeful as it is hands on and you can use this as therapy, and necessary as not everyone will have a pasta machine and cooking/preparing food is necessary for us humans to survive.

Environment

I learnt pasta making in a home, however you can learn it in a variety of different environments, such as social enviroments with your friends or alone. You can also do the pasta making at a school or educational area. As I was new to making pasta, i had to ask someone to teach me, this was a unfamiliar feeling, as i had to learn and make mistakes. However I can now understand that you would need patience to teach someone this occupation and activity !

Participation barriers and affordances

Due to the fact I had never made pasta i relied on having other people to help me and teach me. I felt that I would have struggled to teach myself and also have felt more frustarted if i had tried to learn on my own as i would have had no support or help if i had made a mistake. There didnt seem to be any barriers, as all the ingrediants are simple and most people tend to have them in their cuboard, however if you didnt have the ingrediants then you could not make the pasta.

Personal Reflection

I learnt so much from making pasta, I didnt realise how long it would take and I realise that it is a awesome stress reliever. I had to learn how to use the pasta machine which was great, and I was proud of my pasta ! Would totally recommend learning to make pasta by hand !
